Matcha White Chocolate Blondies

Ingredients:

  • 200g white chocolate, roughly chopped
  • 150g unsalted butter, cubed
  • 3 large eggs
  • 200g caster sugar
  • 1 tsp vanilla extract
  • 2 tbsp Shinrin Tea Matcha powder
  • 150g plain flour
  • ½ tsp baking powder

Method:

  1. Preheat the oven to 160°C/fan140°C/gas 3. Grease and line a 20cm square cake tin with baking parchment.
  2. Melt the white chocolate and butter in a heatproof bowl set over a pan of gently simmering water, stirring occasionally until smooth. Remove from the heat and set aside to cool slightly.
  3. In a separate bowl, whisk together the eggs, caster sugar, and vanilla extract until the mixture is light and fluffy.
  4. Sift the matcha powder, flour, and baking powder into the egg mixture and fold together until just combined.
  5. Pour in the melted chocolate and butter mixture, and fold until everything is well combined.
  6. Pour the batter into the prepared cake tin and smooth the surface with a spatula.
  7. Bake for 25-30 minutes, or until the edges are set and the middle is still slightly wobbly.
  8. Remove from the oven and leave to cool completely in the tin, then cut into squares and serve.
