Ingredients:
- 200g white chocolate, roughly chopped
- 150g unsalted butter, cubed
- 3 large eggs
- 200g caster sugar
- 1 tsp vanilla extract
- 2 tbsp Shinrin Tea Matcha powder
- 150g plain flour
- ½ tsp baking powder
Method:
- Preheat the oven to 160°C/fan140°C/gas 3. Grease and line a 20cm square cake tin with baking parchment.
- Melt the white chocolate and butter in a heatproof bowl set over a pan of gently simmering water, stirring occasionally until smooth. Remove from the heat and set aside to cool slightly.
- In a separate bowl, whisk together the eggs, caster sugar, and vanilla extract until the mixture is light and fluffy.
- Sift the matcha powder, flour, and baking powder into the egg mixture and fold together until just combined.
- Pour in the melted chocolate and butter mixture, and fold until everything is well combined.
- Pour the batter into the prepared cake tin and smooth the surface with a spatula.
