Spinach Matcha Pancakes

These Spinach Matcha Pancakes are a delicious and healthy breakfast option, combining the goodness of spinach and matcha green tea.

Ingredients:

  • 75g spinach
  • 1 tsp Shinrin Tea Matcha powder
  • 150g self-raising flour
  • 1 tsp baking powder
  • 1 egg
  • 150ml milk
  • 1 tbsp vegetable oil
  • Salt, to taste
  • Butter or oil, for frying

Method:

  1. Rinse and roughly chop the spinach. Place it in a food processor and blend until it forms a smooth puree.
  2. In a large mixing bowl, sift the self-raising flour and baking powder. Add the matcha powder and a pinch of salt, and mix well.
  3. In a separate bowl, beat the egg and milk together.
  4. Add the spinach puree to the egg and milk mixture, and whisk well.
  5. Make a well in the center of the dry ingredients and gradually pour in the wet ingredients, whisking continuously until the batter is smooth and well combined.
  6. Heat a non-stick frying pan over medium heat. Add a small amount of butter or oil to the pan.
  7. Use a ladle or measuring cup to pour the batter into the pan, making round pancakes of the desired size.
  8. Cook the pancakes for 2-3 minutes on each side until they are golden brown and cooked through.
  9. Repeat with the remaining batter, adding more butter or oil to the pan as needed.
  10. Serve the pancakes warm with your favourite toppings, such as fresh berries, honey, or yogurt.
