These Spinach Matcha Pancakes are a delicious and healthy breakfast option, combining the goodness of spinach and matcha green tea.
Ingredients:
- 75g spinach
- 1 tsp Shinrin Tea Matcha powder
- 150g self-raising flour
- 1 tsp baking powder
- 1 egg
- 150ml milk
- 1 tbsp vegetable oil
- Salt, to taste
- Butter or oil, for frying
Method:
- Rinse and roughly chop the spinach. Place it in a food processor and blend until it forms a smooth puree.
- In a large mixing bowl, sift the self-raising flour and baking powder. Add the matcha powder and a pinch of salt, and mix well.
- In a separate bowl, beat the egg and milk together.
- Add the spinach puree to the egg and milk mixture, and whisk well.
- Make a well in the center of the dry ingredients and gradually pour in the wet ingredients, whisking continuously until the batter is smooth and well combined.
- Heat a non-stick frying pan over medium heat. Add a small amount of butter or oil to the pan.
- Use a ladle or measuring cup to pour the batter into the pan, making round pancakes of the desired size.
- Cook the pancakes for 2-3 minutes on each side until they are golden brown and cooked through.
- Repeat with the remaining batter, adding more butter or oil to the pan as needed.
- Serve the pancakes warm with your favourite toppings, such as fresh berries, honey, or yogurt.
